Second, theme has no such attribute type like "Icon", so it's not clear how
you got it. Please, disable temporarily all plugins except required and
send me link on page where I can reproduce the issue

when an attribute option is set to TAG, the variant selection options disappear. variations, remove all extra plugins, add variations and send link

Currently i don't know which plugin you use. Also, it's not clear why you use any plugin for this in fact that this is regular woocommerce functionality which doesn't require any plugins
